Top 50 Breweries (by volume) 2011
at first I thought it was incredible that 36 of the top 50 breweries (by volume) were craft brewers… but then I realized that’s more a testament to Busch/Coors buying up everyone and consolidating. :-/
I tried out this bad boy today — came out pretty nice. I used half the sugar, only 3 apples, added ~ half cup of OJ, and I put a tiny bit too much salt in the frosting (whoops! it was so close to on the edge of being good/bad that I didn’t throw it out) - these are for a baby shower tomorrow :)

- 2 cups granulated sugar
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 2 teaspoons pure vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 4 apples, cored, peeled, and chopped (recommended: 2 Granny Smith and 2 Fuji)
Vanilla Bean Cream Cheese Frosting:
- 1 cup unsalted butter, room temperature
- 1 (8-ounce) bar cream cheese, room temperature
- 1 tablespoon vanilla bean paste
- 4 cups powdered sugar (about 2 pounds)
- 1/2 teaspoon salt
